ITBK's great friend Paz sent this amazing book over to us a few years back and just like our copy of Debbie Madison's Vegeterian Cooking for Everyone, its pages are tattered & torn. These people get baking crazy for you; truly they are America's Test Kitchen, comprised of a bunch of "food scientists" who test every aspect of each recipe. I am talking about the protein content of flour and whether you should whisk or fork...It gets a bit technical but you'll be glad they made all the mistakes for you when you taste the end result. Basically you are buying baking pornography because the recipes are so luscious and wonderful, both to read and to eat (for those of you who have tasted the ITBK brownies or cookies, you know what we are talking about) that whatever you make it always comes out perfect.
****Please note on "basic pie dough recipe" page 181 a correction in the recipe: use 1/2 cup vegetable shortening instead of the misprinted 1 cup (thanks so much to Clare)****
